Peel them on cooling and set aside. Cut them into circular pieces.<br \/>\n<strong>Step 2: <\/strong>Heat 2 tbsp. of oil in a shallow pan and fry the Arbi till golden brown, remove from pan and set aside.<br \/>\n<strong>Step 3: <\/strong>Heat 1tbsp. on oil in the same pan. Add the cumin seeds when the oil is hot and wait for it to splutter.<br \/>\n<strong>Step 4: <\/strong>Add the dried red chili by breaking into 2 pieces; add the onions and green chili and saut\u00e9 for a min on medium heat.<br \/>\n<strong>Step 5: <\/strong>When the onion becomes translucent, add the ginger paste , garlic paste and saut\u00e9 for another 2 min.<br \/>\n<strong>Step 6:<\/strong> Add the tomatoes and mix. Add turmeric powder, chili powder, cumin powder, coriander powder, salt to taste and mix . Fry the mixture till it becomes a paste and oil oozes from the sides .<br \/>\n<strong>Step 7:<\/strong> Add the fried Arbi to the fried masala and mix. Add \u00bd cup water, cover with lid and cook on low heat for 8-10 mins. Add some chaat masala and mix . Turn off the gas and let it rest for some time. Garnish with fresh cilantro.<\/span><\/span><\/span><\/p>\n<p>Arbi ki sabji is ready.
